This fruit was picked in mid February 2016, following a perfect warm growing season.
It was cold soaked for 2 days then fermented in open fermenter for 6 days with cap plunging. After fermentation, the wine was pressed to barrels. Malolactic fermentation was carried out in oak, followed by maturation in American & French oak barriques for 24 months.

This wine is friskily seductive from the get-go... lots of mocha and mulberry on the nose, with notes of spruce pine and a hint of coconut. The palate boasts silky tannins that, along with persistent vanillin flavours, spruik the careful use of top quality oak.
But the exciting bit is just how stunningly balanced this sexy little number is... and how it promises so much more if only you can keep your hands off it for a few years...
If you must enjoy it now, think the most delicate fillet steak... small, succulent and not over-embellished. Or cheeses that are soft and subtle, chosen to underscore, not dominate. Then put some bottles aside... 3 to 5 years will see this slim siren develop a very satisfying richness.
